What we know as pecan sandies are unlike their commercial shortbread cousins; they are more similar to what others call wedding cookies or other names. These light, delicious cookies are a staple of my family’s Christmas. But really they’re good any time of year!
This is the “regular” version but I developed truly-just-as-good grain-free vegan pecan sandies too.

Ingredients
- 1c butter, softened
- 1/2c powdered sugar, plus more for sprinkling
- 1tsp vanilla
- 1-1/2c all purpose flour
- 1c finely chopped pecans
Instructions
- Cream together butter, sugar, and vanilla. Add flour and pecans and mix until well combined.
- Chill for 1-2 hours.
- Preheat oven to 300F.
- Scoop out cookie dough then flatten with a fork on the baking sheet (cookies do not spread).
- Bake for 15-17 minutes or until just lightly browned, Sprinkle cookies with powdered sugar. Let cool on wire rack.
