Yes, it’s lasagna… health food this ain’t. But people with dietary limitations need comfort food too! I’ve been thinking about and researching how I could make lasagna happen for a long time. I finally figured it out, and David was VERY happy.
This Kite Hill almond milk ricotta is flat-out GOOD. It’s creamy and tangy and quite honestly better than any storebought real ricotta I’ve ever had. When I made this I made a traditional-ingredient version alongside for me and Abigail, and I had to add far more ingredients to get the ricotta mixture flavorful the way I wanted.
We ate it with a salad and AIP focaccia dipped in olive oil and herbs.
I froze the leftover portions of this so David can have a safe, delicious meal to grab on a night I can’t make dinner.
Paleo Lasagna
Notes
*The company Capellas makes a Paleo lasagna noodle, but it contains eggs.
**Miyokos vegan mozzarella round, sliced, would be good too.
Ingredients
- 1lb ground beef
- 1 24oz jar tomato sauce (I use Classico Tomato & Basil; great flavor, no sugar)
- 2 8oz Kite Hill almond milk ricotta
- 2 cloves garlic, minced
- 2 t dried oregano
- 1 t dried basil
- 1/2 nutmeg, freshly grated
- Salt & pepper to taste
- 3-4 Siete almond flour tortillas*
- 2 8oz bags Follow Your Heart vegan mozzarella shreds**
- Follow Your Heart vegan parmesan, for sprinkling (optional)
Instructions
- Brown ground beef and add entire bottle of tomato sauce.
- Mix garlic, oregano, basil, nutmeg, and salt/pepper to taste into ricotta.
- Foil-line and grease a 9×9 pan. Put a little tomato sauce at the bottom so nothing sticks. Do three layers of tortilla/pasta + ricotta + meat sauce + mozzarella, which means you finish with mozzarella on top. Sprinkle parmesan on top if desired.
- Bake at 375 for 25 minutes, then broil on high for 5 minutes or until slightly browned. (This cheese unfortunately does not fully melt.) Let set/cool for 10-15 minutes and enjoy!

You could probably just do regular pasta, too. Most normal wheat lasagna noodles don’t contain eggs or dairy.
