Meal Plans: May 2021

Whew! Y’all. May was a doozie. I dealt with some mental health issues and multiple migraines, we took a family trip to North Carolina and Virginia for my sister’s wedding, and summer started with a VENGEANCE. (The high on Memorial Day was 105!) The name of the game was definitely easy meals so you’re mostly seeing a lot of repeats here. (Assume leftovers, takeout, and cheese-and-crackers nights fill in the blanks.) My sister who lives with us took a few weeks to be fully plant-based, so some of her servings were adapted from these meals to be vegan. Onward and upward into summer; may your June be filled with reasonable temperatures, beautiful rain, and taking it easy by the water of your choice.
