Meal Plans: April 2021

This was a month I felt like I hardly cooked at all, but all laid out like this I guess I did a time or two! It’s a month of meal plans containing a handful of company dinners with mostly minimal effort options, including the meal prep. There have been a lot of other things going on in our lives this month and food fell somewhat low on the priority list. But we still managed to eat plenty of delicious, whole foods within David’s dietary restrictions (and Hope’s: no folic acid). As we move into summer plan to see more fruits and more grilled meats!

Mealprep breakfasts for David (grain free, gluten free, dairy free, egg free; usually legume free)

Almond butter & jelly chia pudding with sunflower seeds

Blueberry muffins

Chipotle sweet potato hash

Chocolate raspberry chia pudding

Mealprep lunches for David (grain free, gluten free, dairy free, egg free; usually legume free)

Thai pasta salad (using Jovial brand cassava pasta)

Taco chicken salad

Ranch chicken chopped salad

Family dinners (grain free, gluten free, dairy free, egg free; usually legume free)

Pot Roast (we hosted a Maundy Thursday dinner)
Potatoes, carrots
Matzah (homemade)

Leg of lamb over potatoes with mint sauce (my favorite lamb recipe and our annual Resurrection Day tradition!)
Thyme popovers (not Paleo, sorry!)
Romaine & sugar snap peas with pecan dressing (I wouldn’t make this again)

Leftover lamb wraps with Cacik and greens (Siete almond flour tortillas)

Tacos (beef, chicken)

Almond flour chicken cutlets (this isn’t the method I’d use next time)
Arugula salad with lemon vinaigrette

Grilled lemon pork loin
Roasted potatoes
Roasted broccoli & asparagus
