Indian Hash (steak, diced sweet potatoes, rainbow chard, golden raisins, garlic, homemade garam masala)

Thai Chicken Salads (chopped grilled chicken, red cabbage, bean sprouts, shredded carrots, chopped bell peppers, peanuts, cilantro, homemade peanut dressing)

Dinners

Spicy Pecan Chicken (from the Paleo Planet cookbook)
Smashed Potatoes
Roasted Broccoli

Dukkah Pork Chops (from the Paleo Planet cookbook)
Roasted White Sweet Potatoes
Fasolia w Roz (Egyptian Green Bean Stew)

Coconut Tamarind Chicken Curry (from the Paleo Planet cookbook)
Quinoa

Gochujang-Marinated Steak Tacos (Marinate a flank steak all day in 2T gochujang, 2T olive oil, and 2T rice vinegar. Grill a few minutes on each side. Let rest, then slice and put in tortillas with lettuce, more gochujang if desired, homemade vegan garlic sesame crema, and cilantro.)

Pizza

Saturday nights in quarantine we’ve been ordering takeout to support local businesses and give me a break. It’s a really lovely way to go into the Lord’s Day!
