Meal Plan: Week of February 24

Mealprep Breakfasts

Sweet Potato Chia Porridge Breakfast Bowls (I doubled this recipe to last the week for David and portioned them into plastic bowls he can easily carry and microwave. He always eats a banana with breakfast so I didn’t slice any onto the porridge.)

Mealprep Lunches

Mediterranean Salad with Chicken (I skipped the feta and onions, shredded two rotisserie chickens, and used Primal Kitchen Greek Vinaigrette instead of making dressing. I also wound up using broccoli slaw mix instead of kale because my grocery delivery goofed.)

Dinners

Chicken Pad Thai (I’m doing an amalgamation of several recipes, so I don’t have a link. I’ll be using Miracle Noodles fettuccine instead of rice noodles, and JUST vegan egg substitute, which works perfectly for scrambling or baking. My local regular grocery stores didn’t have tamarind concentrate so I bought it on Amazon.)

Paleo pancakes using flax eggs. (It’s Shrove Tuesday, after all; and poor David hasn’t had pancakes in over six months.)

AIP sweet & sour meatballs, Asian broccoli (I’ll try to post this recipe soon), and five spice roasted white sweet potatoes

Tacos (Siete brand makes delicious almond flour tortillas and cassava flour tortilla chips that mean Paleo taco night doesn’t have to include a salad or lettuce wrap!)

Lamb chops with mint pesto and potato crunchies, and garlic mashed parsnips (I have some lamb chops leftover from when we were splurging on pricier meats during AIP. Otherwise this is a copycat recipe of a dish usually served at the Australia booth during Epcot’s annual Food and Wine Festival.)

Pizza (I am working hard to develop a truly great grain-free egg-free pizza crust. When I perfect it, I’ll share it here. As for toppings, I eat dairy but for David I use Follow Your Heart vegan mozzarella which isn’t perfect but works just fine.)
