This is one of the occasions when the adapted version is truly just as good as the original! Pecan sandies are a stable of our Christmas, and I couldn’t let David miss out just because of dietary needs. Although vegan pecan sandies are not Paleo because they contain sugar, they are fully grain, dairy, and egg free!

*I think (but am not 100% sure) the BRM Paleo flour is just equal parts almond, arrowroot, coconut, and tapioca flours. I have only tested this recipe so far with the BRM Paleo flour but it’s very worth trying those four as a substitute if they’re what you have on hand!
Ingredients
- 1c Miyokos cultured vegan butter, softened but not melted
- 1/2c cornstarch-free powdered sugar, such as Wholesome brand, plus more for sprinkling
- 1t vanilla
- 1-1/2c Bob’s Red Mill Paleo Baking Flour*
- 1c finely chopped pecans
Instructions
- Cream together butter, sugar, and vanilla. Add flour and pecans and mix until well combined.
- Chill for 1-2 hours.
- Preheat oven to 300F.
- Scoop out cookie dough then flatten with a fork on the baking sheet (cookies do not spread).
- Bake for 15-17 minutes or until just lightly browned, Sprinkle cookies with powdered sugar. Let cool on wire rack.
