I try to get greens into Abigail’s breakfasts because she doesn’t have molars yet so iron-rich leafy greens are hard for her to eat. The hemp hearts add extra iron and a bit of protein as well. The oatmeal is quite delicious and naturally sweet; I’m happy eating this too!
I baked this in a 9×9 pan but you could also do it in a regular or large muffin tin; just decrease the baking time. I like to serve finger-sized pieces because she will attempt to put the entirety of whatever unit I give her in her mouth!
Blueberry Banana Baked Oatmeal with Greens

Ingredients
- 2 cups mashed bananas (about four bananas)
- 3 eggs
- 2.5oz kale, spinach, or mixed greens, finely chopped*
- 2 t vanilla
- 2 cups oatmeal
- 2 t baking powder
- 1/4 c hemp hearts (optional)
- 1 pint blueberries (fresh or frozen)
- 1/4 c unsweetened coconut flakes (optional)
Instructions
- Preheat oven to 375. Grease a 9×9 pan.
- Mix mashed bananas, eggs, chopped greens, and vanilla in a bowl.
- Add oatmeal, baking powder, and hemp hearts if using; mix well. Stir blueberries in gently.
- Pour into prepared pan, sprinkle with coconut flakes, and bake for 35 minutes or until set with golden brown edges.
