If anyone is actually trying to keep up with my blog you know I’m way, way behind on meal plan posts. (And recipes too, but sshhh.) I have still been meal planning and meal prepping every week for my family (when I remember, you can see that on Instagram) but I haven’t been able to take the time to get them organized and typed out here. I’m going to experiment with monthly meal plan/prep posts, since their main value for you is good ideas gathered in one place!
So here’s some deliciousness from December and January:

This is JUST vegan egg (made from mungbeans), chopped bell peppers, sausage crumbles and Miyokos vegan cheddar (made from oat milk) baked in Siete almond flour tortillas. They’d obviously work wonderfully well if you tolerate real eggs, too!
