In my family growing up, we always baked Christmas cookies! Starting from very young my mom would help us cut out trays of sugar cookies to decorate with sprinkles and colored sugar. This year Hope and I agreed we needed to make sugar cookies, peanut butter blossoms, and pecan sandies for it to “be Christmas”. But it didn’t seem fair for David to miss out! So I set my goal to make grain free, dairy free, egg free versions of every one of these, plus some vegan fudge. These treats aren’t all Paleo because some do include sugar, but they’re okay for David to eat!
Unbound Wellness has a cutout sugar cookie recipe that is Paleo and even AIP! Instead of icing them we decorated with naturally-dyed colored sugar before baking. (If you’re looking for the “real” version, Alton Brown’s sugar cookies are my go-to. He also developed a gluten-free version.)
Paleo Running Mama has a vegan almond butter blossoms recipe that’s absolutely delicious. Instead of making compatible “kisses” we just placed a few allergy-friendly chocolate chips in the center.
And finally, pecan sandies! That’s what my family has always called them, anyway; they’re similar to wedding cookies or a handful of other names. They aren’t shortbread like the packaged version; they’re light and crumbly and topped with delicious powdered sugar. Thankfully since they’re already egg-free I was able to make delicious grain-free vegan pecan sandies too!
Turns out all of these freeze well; we made them early on and froze half the batches to serve on Christmas Day. I’d love to hear about any of your family’s traditions you’ve adapted to be grain-free dairy-free and egg-free!
