You may have noticed that David eats a lot of chia pudding. It’s my super easy go-to breakfast mealprep for him since he can’t have eggs (or dairy, grains, legumes, etc.). Therefore I’ve amassed plenty of flavors and toppings to keep it from getting too repetitive! I’m finally putting all the chia pudding ideas in one place so they’re easy to refer to when I am stuck. (Plus believe it or not multiple people have asked me for this list.)
My base chia pudding recipe is 1/3 cup chia seeds to 1 cup liquid (usually almond milk) per serving, with a tiny splash of maple syrup to taste. For David I also put one scoop of grass-fed beef collagen (Note: chia is a complete protein, collagen is not), 1T of psyllium fiber, and 1T of ground flax seed per serving. Let set ten minutes before topping.
I portion each serving with toppings into a food storage bowl and keep them in the fridge for up to a week.
